Creamy Vegan Mac 'n' Cheese

This dish automatically makes you think of Mac n Cheese, it’s creamy and smooth with a cheesy taste. The avocado provides a creamy base for the meal and the nutritional yeast or ‘nooch’ gives it a cheesy taste. 

We experimented with using oil instead of water for the sauce but didn’t see much of a difference so thought why not include less oil and be a bit healthier anyway. The tomatoes blended into the sauce give a much fresher flavour combined with the chives and basil. We like to include chives in every meal, we love it. The flavours in the sauce are flexible so whatever you happen to love to cook with, it’s so easy to mix it up. We started with including spring onion in the sauce but once blended it became too concentrated a flavour and was overwhelming the balance of all the different flavours. 

 

You could easily serve this up with fresh garlic and spring onion or any other vegetables you may have in your fridge at the moment. We love it with kale, by adding the kale into the boiling water for a minute or so it leaves it crunchy. The crunchy texture of the kale combined with the creamy pasta is delicious! 

Perfect for lunch or dinner, this is a really satisfying meal that doesn’t leave you looking for snacks. As well as being delicious and containing the dream ingredient that is avocado, this vegan pasta dish is quick and easy to prepare.

 

This serving would be great as a main meal for one or side dish for two. To serve more people, simply double the amounts. 

 

This is our go-to lunch recipe and never fails to disappoint. What’s your go-to vegan meal? 

Ingredients 

 

75g whole wheat penne pasta 

3-4 tomatoes 

150ml Water 

1 Avocado 

1-2 handfuls of kale 

1 tbsp Nutritional yeast 

2 tsp Chives 

Few leaves of Basil 

Salt & pepper (to taste) 

 

Method 

  1. Bring water to boil in a pan. Add the pasta and cook for roughly 10-12 minutes or until cooked. 

  2. In a blender combine the avocado, chives, water, basil and tomatoes until a smooth consistency is formed. 

  3. Add the kale to the pasta and cook for 1-2 minutes. 

  4. Drain the cooked pasta and kale and combine with the creamy avocado sauce in a separate mixing bowl. 

  5. Season with salt, pepper and fresh basil. 

  6. Serve immediately & enjoy.
